What time do restaurants, bars, and nightclubs stay open till?

I will be working remotely in Thailand in February. I would rather Chiang Mai than Bangkok because I feel the vibe here is much more my kind of scene.

However, my work hours will be 3pm – 11pm. When it reaches 11pm I will want to grab some food and ideally go out for 1 or 2 hours for some beers, maybe a date, and so on. Not every night of course but definitely would like to have the option at least.

Is it true that most places close in Chiang Mai by mid night?
