Professional/semi-professsional cooking classes

Im looking for a cooking school that i could attend on my days off from being a profession chef…. I want to learn northern thai cuisine and techniques effectively, but all the options on the internet seem super un serious. Im not looking for a proffessional thing necessarily, but a place that is flexible enough to accommodate my needs, given that im willing to pay more/several times…
Skills i need: decent wok handling, solid non-westernized recepies for the northern basic dishes, info on ingredient + spices
