Pork rind crumbs as a spicy rice topping?

So once randomly going to a Muay Thai class I came across a lady selling homemade jars of what I can only describe as pork rind crumbled up into almost a seasoning you would use on top of rice (I think) and it was crunchy and packed quite a spicy kick but ever since then I haven’t been able to find it. Anyone have any clue on where I could get my hands on more of this stuff… speaking of which – where can I get the best pork cracklings/rinds or are they all pretty much the same?
