Nonfat (or very low fat) diet & Thailand

I am planning on visiting Thailand in December, but need to adhere to a nonfat or very low fat diet for medical reasons (my body doesn’t digest/process fat normally).

I hear that most everything is stir-fried, so that is a concern.

Here is a list of foods I cam only eat in tiny, tiny quantities: (1-3 g or 1/4 tsp of one of these items per meal): Oil, fat, lard, butter, nuts, coconut milk, beef, pork, fatty chicken — skin and dark meat (white meat only is OK), fatty fish, egg yolks, coconut milk, coconut, full-fat cheese and dairy, soy beans, tofu.

Protein sources that I can have: Chicken breast, turkey breast, seafood, medium and lowfat fish, lentils and beans (but not soy beans), egg whites, nonfat dairy.

I can have all starches, fruits and vegetables as long as they are cooked with very little to no fat.

Advice? I think I can handle stir-fries as long as they use just a tiny amount of oil? How much oil is typically used? Can much less be used if I ask?
