6 nights in Chiang Mai. Any recommendations of places outside of Chiang Mai to consider visiting? Dad and teenage daughter. Chiang Ria?

We don’t have too long in Chiang Mai. Want to spend a couple of days around the main areas/markets etc. probably doing a Tuk Tuk tour where we drive the Tuk Tuks. Visiting Grand Canyon Water Park. Would like to do a camping above the clouds night (any suggestions as too many to choose from on Trip Advisor) and should we visit Chiang Rai and the white temple which looks amazing but is a long way to travel in a day. Worth staying overnight?
