What do you guys think about the all-you-can-eat suki/mala restaurants like MK, Suki Teenoi, and the small ones which are open very late?

Are they unhealthy? Are some healthier than others? Or does it just depend what you eat there and how you prepare it? I worry about the quality of the meats, vegetables and seafood. I wonder how long they’ve been sitting out for, especially in the lesser known restaurants which don’t have a lot of customers. I also feel like cooking everything in the mala soup and some of the other soups is not healthy, but maybe there’s a healthier soup to cook it in or do some people just use water? Thanks!
