Uni stars at Up & Above restaurant

In Japan, where the fruits of the sea feature prominently in the national cuisine, sea urchin roe is a particularly prized delicacy. Known as uni, it can retail for as much as ¥40,000 (US$360, Baht 11,300) per kilo. In fact, the Japanese love uni so much they consume over 80% of the world’s production, which amounts to around 50,000 tons annually.

Uni can be eaten raw in sushi and as sashimi but its strong marine flavours make it a great foil for other robust dishes. Which is why uni takes centre stage at Up & Above Restaurant in a special menu available from October until the year’s end.

The menu includes a creamy sea urchin risotto with roasted nori seaweed, sea urchin spaghetti with ikura, tiger prawn and onsen egg, plus a hearty roasted Japanese Wagyu with uni, mitsuba pomme mouseline and dai dai beef jus.

The sea urchin promotion at Up & Above Restaurant is available daily from 12:00 to 22:30 from 1 October to 31 December 2020, priced from Baht 950++.
