Remi Verrier, the new chef de cuisine at The Allium Bangkok, The Athenee Hotel, has curated a menu of French dishes that are inspired by his culinary journey through fine dining and Michelin-starred restaurants around the world.

Also inspired by dishes from his childhood in France, each course tells a story. “I wouldn’t say my cooking philosophy is traditional because people will not understand that. People often think traditional is duck confit. I do modern French cuisine but it is influenced by my career, which has taken me all over the world. I cook with a lot of spices, may they be Asian or Middle Eastern. I believe in creation, in learning and teaching at the same time. I don’t have an ego,” says chef Verrier.

A two-course lunch is priced at B850++ per person, while three courses is B950++. The Experience dinner is  six courses for B3,200++ per person…
