Planning a trip in november

So my wife and I had a 2.5 week trip planned for our honeymoon but it got cancelled due to covid. Now though, we are looking to go on a nice trip and Thailand again is on the top of our list.
The original trip would have been in July so we had planned to go to Koh Kamui, Phangan and Tao, each for a couple days. There were some specific things we wanted to do on each island (Nature Marine Park, and Elephant sanctuary on Samui, get Scuba cert and do a couple dives on Tao for example) but other than that the plan was just to do whatever, whenever. After doing the island thing, we had some flights booked up to chiang mai. We didn’t have as much time to spend there, i think like a day and a half and then we planned on doing a 2-day elephant sanctuary thing (elephant nature park) before flyinh back to bankok for a couple days and then heading home.

Ideally i’d like to just recreate that trip because I put a lot of work into planning everything out but our trip will be in november this time around and the Samui side is much rainier then. That said, the plan is to stay in phuket, phi phi, MAYBE Krabi if you guys can convince me that the weather will be okay. I like the idea of staying on the smaller islands but phuket obviously has the most to offer. I guess the question is how long should we stay on Phuket, Phi Phi, or others? Island hopping is super cool to me so I’d like to do a lot of that. Travelling around by boat or whatever even just to go to a restaurant or something sounds sweet. I’ve started to look into all the things to do and it’s honestly just endless so I don’t even know where to start with narrowing things down.
Also looking for hotel recommendations. Don’t need anything outrageous but am willing to pay for something nice. When we booked in Samui, the place had what looked like a wicked private pool. That seems cool so I’d like to go for that if possible. Will probably end up staying in a few places though on multiple islands.

I know this post is super scattered but hopefully I can get some pointers on where to start planning, how many days to allocate to certain places etc. Thanks!
