Phone sim advice

I’m currently on an airtime plan with o2 and I’m planning to upgrade to a sim only so I can pay off my device plan. I’ll then request to cancel straight away so I’m not tied to paying a sim contract when I come to Thailand in a month and then have to pay extortionate roaming fees. I think it gets cancelled within 30 days so I will time it to the day I arrive in Thailand then I’ll just get a local sim at the airport preloaded with data, I was just wondering is there a better way around this or is this a good way around it? I will also request a PAC code so hopefully I can keep my mobile number and transfer it to the sim I get in Thailand, but I would also like to know if I’ll be able to keep transferring my phone number as I get different sims for other countries I plan to visit?
