Fish sauce and cough syrup scoops are a thing at Bangkok ice cream parlor ‘10010 Bar’

Fish sauce and cough syrup have found their way into frozen dessert at a recently opened joint on Bangkok’s Thonburi side.

Inside a Khlong San district shophouse, 10010 Bar’s Kittiphum “Ball” Hanpattanakitpanich scoops ice cream flavors from classic vanilla and strawberry to fancier chocolate sorbet and pecan praline, but it’s the wackier versions that have drawn notice.

Experimenting under a steady -18C, Ball, known for his fresh-from-oven dishes Baked By Ball, said he came up with the idea to mix in fish sauce while teaching baking to prison inmates in Rayong, a coastal province famous for its high-quality nam plaa. Questing for the perfect salted caramel flavor, Ball said he substituted the salt with fish sauce sweet-and-salty scoops without a fishy smell.
