Straight outta Khaosan by way of Rome, ‘pinsa’ street bites come to Phra Khanong

We’ve nibbled away at New York-style and Neapolitan pizza, but Roman pinsa isn’t a common find in Bangkok

Here comes The Pocket, a delivery venture relocating from tourist-empty Khaosan Road to the on-trend neighborhood of Phra Khanong. 

Led by Roman chef Sandro Ciniglio, The Pocket first opened in April 2020 on Khaosan Road in what proved to be unfortunate timing. The shop closed temporarily before recently reopening for delivery, using its bakery on Soi Sukhumvit 71 as a base of operations. 

There, they crank out pinsa, a cousin of pizza that features a unique dough made from a combination of flours such as soy, rice and wheat. These flours result in a lighter, airier texture, and also yield less fat, sugar, cholesterol and carbs than your average slice.

The Pocket lets their dough rest and rise for 72 hours before kneading it into ovals and topping them…
