How do I convince them that I really do want it spicy?

I’m a 55 year old white woman, and I can’t get a spicy dish here. I even ordered a cocktail called “Fire” last night and they made it without any heat! I go through the typical convo– when I order they say “it’s spicy!” I say “yes! I like it spicy!” And they proceed to make it mild. Like, ZERO heat. Help meeee! 🤣 I want to like it here but… I’m really tired of the bland food. (food is the reason I travel!)
